Spice: The Variety of Life (including Herbs)

Keegan C. Rodgers, Head Baker at the People's Food Co-Op, will lead an interactive & lively talk on the history, processing, uses & chemical reactions of spices & herbs in baking. Discussion will also include a review of some popular & unusual flavor combinations. Other items used in baking such as baking soda, baking powder & cream of tartar will also be reviewed. Some spices & herbs which may be discussed include all spice, basil, cayenne, cardamom, cinnamon, ginger, nutmeg, rosemary, salts & thyme. Attendees will leave with a new perspective of spices and literature to take home.

A Bouquet of Flours (including Gluten-Free)

Some flours which may be discussed include all purpose, pastry, cake, and bread flours, as well as wheat flours and alternative or gluten free flours such as garbanzo, sorghum, and rice.

Attendees will leave with new baking skills and literature to take home. Tastes of Keegan's baked goods will be included, too! This event is cosponsored by the People's Food Co-Op and is part of an ongoing baking series.

Baking w/Sweeteners 101 w/The People's Food Co-Op

Keegan will cover a variety of sweeteners including evaporated cane sugar, syrup, honey, artificial sweeteners, fruit/plant based sweeteners such as agave nectar and stevia. Attendees will leave with a new view on sweeteners and with literature to take home.

An Afternoon with Chef Mei Lin, Season 12 Top Chef Winner

Michigan native Chef Mei Lin will join us for a special event to talk about her culinary career and time on Top Chef. Now based in Los Angeles, she has been traveling, cooking, and percolating on what's next after winning Top Chef earlier this year.

Mei grew up working alongside her father at their family-owned-and-operated restaurant outside Detroit, where she learned the fundamentals of being a well-rounded cook and running a restaurant. Over the years, she has had the privilege of working for some of the most revered chefs in the industry such as Michael Symon (Roast), Marcus Samuelsson (C-House), Wolfgang Puck, and headed to Los Angeles to work with Michael Voltaggio at ink.
